DOMAINE DU CHAT BLANC
Behind the name "Domaine du Chat Blanc" lies our little family: Catherine, Stéphane, Paul our son and Bonbon our cat.
Our story begins in London where we have been living for 12 years following a professional transfer. London is a city with a worldwide cultural and economic influence. Our little family fell under the charm of this great dynamic capital. But, after a few years, our dear country began to miss us too much and above all, its good food and good wines! The wine is a real passion for Stéphane and he had always cherished the dream of running a small vineyard in Provence.

Act to highlight the terroir
This dream became a reality 4 years ago when we were able to buy an old farmhouse dating from the 18th century surrounded by a vineyard in AOP Ventoux, composed of Grenache and Syrah with a surface of 5ha, grown organically for 30 years. This vineyard then exploited via the local cooperative is located in Saint-Didier in the heart of Comtat Venaissin, at the foot of the mythical Mont Ventoux. It benefits from an exceptional microclimate: the sun, a dry climate with the breath of the Mistral favorable to the natural protection of the vine.
We quickly set to work to renovate the farmhouse, which was almost in ruins for 3 years with the help of local artisans, to allow this beautiful old building to find its soul.
At the same time, we restored the vineyard where we had to replace half of the vineyards that no longer produced and lovingly maintain the rest.
ORGANIC VITICULTURE IN DOMAINE DU CHAT BLANC
Respect of nature and soil
It is essential for us to be in harmony with nature and to adopt the best ecological practices.
Thus, instead of using chemistry and weed killers, the vineyard is mechanically worked. For fertilization, chemicals are prescribed and replaced by organic amendments using natural green fertilizers, respecting the soil balance.
ORGANIC VINIFICATION IN DOMAINE DU CHAT BLANC
Make a wine as natural as possible
After ensuring the cultivation of a good fruit as naturally as possible, we regularly taste the grapes and wait for full maturity before making the manual harvest, very early in the morning to avoid oxidation.
Gentle winemaking is also organic with a constant desire to limit inputs throughout the winemaking process, in order to make a wine as natural as possible and to promote the expression of the terroir. The only concession is a minimum amount of sulfur to guarantee good hygiene and the stability of the wine, with only 20% of the amount allowed in organic farming.

Guess who inspired us for our domain name and label?
At home, she leads us by the nose! She knows how to make herself respected, participates in our joys as well as our sorrows and occupies a full place in our family.
Our sweet cat Bonbon deserved to become the mascot of our vineyard!
Thus one day was created the "Domaine du Chat Blanc".
THE FIRST CUVEE OF DOMAINE DU CHAT BLANC
A total Success!
Our organic "Cuvée Première" is a total success, from our old vines (50% Grenache and 50% Syrah) producing a concentrated and fruity juice expressing the richness of its terroir.
Its robe is of a beautiful garnet, it has aromas of black fruits and notes of sweet spices.
The palate is round, supple, structured with refined tannins and a nice length.
It can be served as an aperitif with charcuterie, grilled meat or cheese.
